A 240mm gyuto in 52100 and 15N20 Damascus, forged and finished by hand over five weeks.
- Forging
Forge-welded 300 layers of 52100 and 15N20, then drew the billet out to a chef blank.
- Grinding
Set the bevels on the 2x72 and brought the blade to a crisp distal taper.
- Heat treat
Normalized three times, then austenitized and quenched in fast oil. Tempered to 61 HRC.
- Handle
Fit and shaped a stabilized black walnut handle, then hand-rubbed the finish.
